How can local businesses use customer data from Wi-Fi logins to improve their marketing?

I manage a small bakery, and we recently set up free Wi-Fi for our customers. It’s been great for attracting more people who like to sit and work or just hang out, but I’m not totally sure how to use the data we’re collecting. I can see names and emails from logins, but I don’t want to spam anyone or seem intrusive.
